The Future of Food, Health, and Wellness in Tourism Through Innovation and Technology
Bendegul OkumusExtensive research has been conducted on topics such as food, health, and wellness tourism, as well as sustainability and technology; however, these areas are often explored in isolation rather than in an interconnected manner. This perspective article argues that the future of tourism development will increasingly depend on the integration of food systems, health and wellness services, sustainability practices, and digital technologies within tourism destinations. By drawing on theoretical frameworks such as holistic health, sustainable development, consumer behavior, and technology adoption, the article proposes a conceptual model that views tourism destinations as holistic ecosystems. These ecosystems aim to enhance visitors’ well-being through environmentally and socially sustainable practices. Emerging trends shaping this process are discussed, including sustainable food systems, personalized nutrition in food and gastronomy tourism, digital health technologies, artificial intelligence, and virtual and augmented realities. Additionally, this article argues how these trends are shifting the way food, health, and wellness are used in tourism experiences and creating new forms of competitive advantages for destinations. By combining knowledge from multiple disciplines, this perspective underscores the need to develop a more comprehensive research agenda that examines the relationships among food, health, sustainability, and technology in tourism contexts. This article also outlines key areas and strategic implications for researchers, policymakers, and industry stakeholders interested in developing sustainable tourism ecosystems that focus on food, health, wellness, and technology.
