TECHNOLOGICAL RISKS FOR SPECIFIED QUALITY BY-PRODUCTS IN SUGAR BEET PROCESSING

The objective of the study is to identify the process risks of failure to achieve the specified quality for by-products of sugar beet production used as carbohydrate feed. The study was conducted in the Laboratory of Sugar Technologies and Product Control Methods of the Kursk Federal Agrarian Scientific Center. The objects of the study were the process flows of dried beet pulp and molasses production of the food system of white sugar from sugar beet. The risks considered included non-compliance of molasses in terms of the content of α-amine nitrogen, reducing substances and nitrates; dried beet pulp - in terms of nitrate content. Risk identification was carried out in accordance with GOST R 27.303-2021 (IEC 60812:2018). The processes were analyzed by identifying local food systems in the by-product process flows, for which their functions were formulated based on available information and own experience; the type, mechanism of failure, cause of failure, and risk rank were determined. For the 10 selected local food systems producing molasses, 29 failure causes were identified, of which 17 % were related to personnel failures, and 83 % were technological. Only technological failures, localized in two systems, were rated as high risk, accounting for 10 % of the total. For the five selected local food systems producing dried beet pulp, 10 failure causes were identified, of which 20 % were related to personnel failures, and 80 % were technological failures. Only technological factors localized in five systems rank high, accounting for 50 % of the total. For reducing substances, the primary source of molasses is local food systems with technological risks; for α-amine nitrogen and nitrates in both molasses and pulp, it is sugar beet.
