Sugars are the most abundant bio-organic compounds in nature. Due to their widespread availability and benign nature, these molecules are being studied for their significance in sustainable organic synthesis. Although sugar-derived ionic liquids have demonstrated promising potential as sustainable catalysts for chemical synthesis, the field remains an emerging area of research. This research establishes new opportunities for formulating naturally derived sugar-based liquids or salts and evaluating their utility in organic synthesis against rigorous green chemistry standards. This chapter will focus on the design and synthesis of sugar ionic liquids and their relevant sustainable synthetic applications.
