Introduction:

Street food plays a vital role in urban food systems worldwide but remains a major public health concern because of foodborne diseases, poor hygiene, and microbial contamination. Although research on street food safety has expanded considerably, a comprehensive bibliometric evaluation of the global scientific landscape has been lacking. This study aimed to analyze worldwide research trends, collaboration patterns, and thematic developments in street food safety research.

Methods:

A bibliometric analysis was performed using publications retrieved from the Web of Science Core Collection and Scopus databases. Original English-language research articles published between January 1, 2016, and July 2, 2026 were included. After database merging and removal of 88 duplicates, 571 articles were included. Descriptive bibliometric indicators, citation analysis, collaboration networks, and keyword co-occurrence analyses were conducted.

Results:

Scientific output increased steadily throughout the study period, indicating growing international interest in street food safety. The International Journal of Food Microbiology , Food Control , and the International Journal of Environmental Research and Public Health were among the leading publication sources. Wageningen University and Research was the most productive institution, while the United States was the leading contributor and central hub of international collaboration. Keyword analysis identified food safety, street food, Listeria monocytogenes , Escherichia coli , Salmonella , antibiotic resistance, hygiene, and risk assessment as the dominant and emerging research themes.

Conclusions:

Global research on street food safety has expanded substantially and has become increasingly multidisciplinary and collaborative. This bibliometric analysis provides a comprehensive overview of the field, identifies major research hotspots and collaboration networks, and offers valuable evidence to support future research, food safety policies, and public health interventions aimed at improving the safety of street-vended foods.
