The functional food and beverage industry has grown significantly in recent years, driven by rising consumer demand for products that promote wellness, and disease prevention. This review explores recent advancements, focusing on key ingredients and a wide range of applications in categories such as nutritional bars, plant-based and fortified dairy alternative beverages. Technological innovations, including biomarker discovery, precision nutrition, nanotechnology, and artificial intelligence (AI), are revolutionizing product development, improving ingredient stability, bioavailability, and enabling personalized dietary solutions. Alongside these innovations, sustainability and clean-label trends are reshaping the sector by encouraging the use of natural ingredients, upcycled byproducts, and eco-friendly packaging, aligning consumer preferences with environmental responsibility. Despite the promising growth, challenges such as sensory and regulatory dynamics, and building consumer trust remain critical hurdles. Addressing these challenges through continued innovation and consumer education will enable the products to fulfill the evolving demand for health solutions and address lifestyle-related diseases.
