Bioeconomic model of food waste valorization
Sergey Revunov, Tatiana Anopchenko, Vladimir GubachevThe relevance of this article is supported by the fact that a key element in the development of a sustainable bioeconomic paradigm in modern conditions is increasing the value of waste, which implies an intensified scientific search for models, tools, and mechanisms for their valorization. The aim of the study is to substantiate a conceptual model for creating a value chain based on biological raw materials obtained as food industry waste. This article examines the dynamics of waste generation indicators, identifies key trends, and integrates M. Porter's concept of value chains as applied to biological raw materials from waste. The authors provide a scientific interpretation of the mechanisms for generating added value through the valorization of fruit and vegetable waste and meat and dairy waste in the context of achieving one of the main goals of the bioeconomy: producing a wide variety of high-value-added products by transforming food waste generated in various economic sectors. The results of the authors' research can be used at the federal and regional levels of government, in the preparation of industry-specific and territorial projects, and economic development programs, as well as by economic entities in the Russian agro-industrial complex.
