Artificial Intelligence in Fat and Oil Products: Quality Control and Authentication

Edible fats and oils are essential in our daily diet as they are of high energy value. The production of fats and oils must meet the criteria set by regulations, therefore, the quality control of edible fats to assure their safety and authenticity is very urgent. With the emerging development of artificial intelligence (AI), such as machine learning and pattern recognition, the quality control of fats and oils has adopted AI techniques. The application of AI techniques in the field of fats and oils includes the determination of physico-chemical properties, hydrolytic and oxidative stabilities, identification of foreign components and authentication studies. Indeed, with the development of AI combined with other computer software, the quality control of edible fats and oils can be optimized and automated.
