Analysis of Antioxidant and Antinutritional Properties of Quinoa (Chenopodium quinoa Willd) Variety

The yellow seeded quinoa seeds variety is one of the accession lines of EC series brought from Peru and tested at ARS, Anantapur was analysed for its antioxidant and antinutritional properties. The phytochemical screening of quinoa seeds showed that carbohydrates, proteins, flavonoids, fixed oils and fats, amino acids, cardiac glycosides and saponins were detected in methanol and water extracts. Steroids, alkaloids, phlobatannins, phenols and quinones were absent in these samples. The anthocyanin content for test sample was 2.19±0.24 mg/100g and control was 2.45±0.13 mg/100g indicating that test sample had lower anthocyanin content. The antinutritional components when combined with nutrients present food were a major concern as they reduced nutrient bioavailability. The total saponin content of test sample was 3.15±0.08 mg/100g and control was 2.10±0.06 mg/100g with test sample and total oxalate content of control was 6.41±0.03 mg/100g and test sample was 8.73±0.02 mg/100g with higher than control.
