This research aimed to address the lack of comprehensive information on the storage and preservation of nutrients in wild fruits. It examined the results obtained during the preservation of Chamaerops humilis L. fruits over a period of 18 months, utilizing various storage conditions (room temperature, darkness, and refrigeration) as well as different types of packaging, including plastic (polypropylene) and parchment paper. According to the analysis of variance (ANOVA), no significant differences were observed for the physico-chemical and microbiological parameters of the fruits preserved in refrigeration, darkness, plastic, or parchment paper. However, a notable increase in pH from 4.32 to 5.12 and a reduction in moisture from 50.1% to 11.2% were observed for fruits preserved under laboratory conditions. Conversely, regardless of the storage condition, no significant differences were observed for the total aerobic mesophilic flora. Furthermore, the cells of the fruits exhibited high resistance, as indicated by stable microscopic structures without deformation throughout the 18-month storage period and underwent no deformation or degradation during storage, irrespective of storage conditions. These findings provide valuable insights for the food industry, particularly in developing strategies for the nutritional valorization and industrial storage of C. humilis fruits
